Zucchini Pancake with Tomato Toppings - Healthy and Light


Pancake is one of my favorite breakfast.  It is very comforting to eat and easy to make. This "super-pancake" is packed with the essential protein, carbohydrates and vegetables needed to start the day.  Zucchini is the main ingredient.  The tomato topping adds nutrition and sweetness. This "super-pancake" is light, easy and healthy.  Can be also served for lunch.  


Adding some feta cheese, cottage cheese or sour cream gives more delightful taste.


Very simple and healthy ingredients, something you have in your kitchen.  When choosing vegetables, I always prefer local produce.  It's cheaper and fresher.   


Recipe for 2 persons

Ingredients:

2 cups grated zucchini
2 tbsp white or green onion, finely sliced 
1/2 cup all purpose flour
1/2 tsp salt 
1/2 tsp black pepper 
1 egg
3 small grape tomatoes or 1 small regular tomatoes, sliced 
2 cloves garlic, finely sliced 
butter for frying the pancake
olive oil for sauteing

feta cheese, cottage cheese or sour cream (optional topping)
green onion, (optional garnish)


Steps:

1.  Grate zucchini.  Blot with tissue paper to remove extra water or juice.













2.  Finely slice the onion then add to the bowl.


3.  Add the dry ingredients flour, salt and pepper.


4.  Add 1 egg.  If you want to load it with more protein you may use 2 eggs.


5.  Mix everything in the bowl.  


6.  Rub some butter in the pan.  Add batter depending on your preferred pancake size. Once cooked, set aside.


7.  Prepare the toppings.  Heat oil in the pan, saute garlic and tomato until the tomato is softened, about 3-5 minutes.  



8.  Season with salt and pepper.


9.  Serve on top of the pancake.  Pancake is ready!


10.  Optional:  You may upgrade the pancake by adding feta cheese, cottage cheese or sour cream to the toppings.
