Easy, healthy and delicious beef wrap with fresh salsa. Greek or plain yogurt and feta cheese are used as substitutes instead of heavy cream and cheese. The fresh lettuce and cucumber make the wrap healthier and refreshing to eat. Grilling the wrap adds crispiness and texture.
This beef wrap is a combination of fajita and greek salad.
Simple and tasty recipe for a relaxing dinner. Works for lunch and snack too.
Recipe for 2 persons
Ingredients:
Beef Stuffing
3 cloves garlic
300 grams minced beef
1/2 tsp cumin
2 tbsp tomato paste
salt and pepper to taste
Vegetable Stuffing
1 onion
1 bell pepper (for this recipe I used 1/2 yellow and 1/2 green bell peppers)
pinch of cumin
4 mushrooms (optional)
Salsa
2 small or 1 regular size tomato (any kind)
1/2 onion
1 clove garlic
3 tbsp coriander leaves
squeeze of lemon juice to taste
salt and pepper to taste
For serving
3 tbsp Greek or plain yoghurt
feta cheese
wrapper
handful of lettuce (optional)
1/2 cucumber (optional)
Directions:
1. Saute garlic. Add beef, cumin, chilli powder, tomato paste. Season with salt and pepper.
2. Saute until cooked.
3. Heat pan, when hot add onion and grill for few minutes. When onion turns translucent and a little brownish sprinkle some cumin. Drizzle some oil.
4. Pan grill the bellpepper same instructions in 3.
5. Pan grill some mushrooms. This is optional.
6. Set-aside cooked meat and vegetables. It would be good to put them on a sizzling plate to easily re-heat if needed.
7. Combine the tomato, onion, garlic and coriander in food processor or blender. Season with salt, pepper and lemon depending on your preference. Process until desired texture. Set-aside
8. Slice handful of lettuce and cucumber. Set-aside. (optional)
9. Serve everything together with plain yogurt, feta cheese and wrapper. You may also serve it with lettuce and cucumber to add refreshing taste to the wrap (optional).
10. Wrap. Sprinkle some hot sauce or jalapeno if you want it more spicy.
11. Grill the beef wrap for few minutes to make the wrapper crispier (optional). Serve warm. Enjoy.
