classic and healthy tomato vegan pasta is served with grilled vegetables and capers. The charcoal flavor in the eggplant goes well with the tomato sauce. The tomato sauce can be prepared with cooking or raw.
Ingredients:
1/2 eggplant grilled
capers for garnish
pasta for 2 servings, cooked as instructed
2 regular sized tomatoes processed in food processor
1 tbsp of pesto
1 tbsp of tomato paste
salt and pepper to taste
4 cloves of garlic minced and finely sliced
olive oil
parmesan cheese for garnish
Preparation:
With cooking
1. Heat oil in a pan and add garlic.
2. Add tomatoes, pesto, tomato paste. Simmer for 5 minutes in low heat. Season with salt and pepper and add more tomato paste depending on the sourness you like.
3. Once cooked add grilled eggplant and pasta then toss together.
4. Garnish with capers and parmesan cheese and serve warm.
Without Cooking:
You can prepare the tomato sauce without cooking
1. Mix tomatoes, garlic (2 cloves only), tomato paste, tomato sauce and pesto, olive oil in food processor until desired consistently. Season with salt and pepper depending on yur taste. Toss pasta and sauce.
